Instant Coffee vs. Ground Coffee: What's the Difference?
Instant coffee and ground coffee start from the same place — actual coffee — they're just processed differently. Ground coffee is roasted beans ground for brewing. Instant coffee is brewed coffee that's had the water removed, leaving soluble crystals that dissolve back into hot water. The convenience of instant is unbeatable; the tradeoff has traditionally been flavor and quality.
But "instant" doesn't have to mean low quality. A clean instant coffee made from a good coffee base, with a short ingredient list and no fillers or synthetic additives, can be a genuinely solid cup — far better than the watery, additive-laden instant of old. The real dividing line isn't instant vs. ground; it's quality of beans and whether anything unnecessary was added. More in what makes clean instant coffee.
